Preparation of the side pork:
Cut the side pork in cube of ¾ inch.and slowly melt over medium heat ina cast iron skillet (do not overheat).
Cooking will be complete when the fat sops boiling:
the side pork cubes will be lightly golden in color.
Using a slotted spoon, remove the side pork pieces, cool.
Chop or mash the side pork using a fork.
Set suet and dripping aside, separately, for later use.
Preparation and cooking of the cretons:
Stir frequently during cooking.
In a large heavy pot, combine the ground pork (shoulder & flank),
minced onions, El-Ma-Mia cretons spice and boiling water.
Bring to a boil, simmer 30 minutes.
Add the fat dripping and simmer 2 or 3 hrs.
Twenty min. before the end of the cooking time,
complete,add salt to taste.
Put the cretons in containers and cool well.
